Everything else is untouched. Maps, story, everything. When you do story, or any lower level content you are scaled down.

Leveling to 80 isn't super difficult, and you get map progression and hero points. Most importantly, you learn how to play your character. Do your personal story, explore the world, do events. GW2 is a slow burn meant to be enjoyed. So literally unlocking any elite specilization will take 10 seconds by this. You'll need total of 300 Testimony of Heroics to unlock an elite spec. A lvl 80 boost gives you i believe Celestial gear which is kind of an all arounder and even meta on some professions, so you can continue with open world content as you like. I would argue the the best classes in celestial atm are guardian, revenant and elementalist. For open world, i would lean toward revenant. But that is just my preference. You can always use boost to try the profession, and if you dont like it, dont accept it.
